Zucchini Bread

3 eggs
2/3 c. vegetable oil
2 c. sugar
1 t. vanilla
2 c. finely grated zucchini
2 t. baking powder
1 t. baking soda
1/2 t. salt
3 c. flour
2 t. cinnamon

Mix together eggs, sugar, oil and vanilla.  Fold in grated zucchini.  Sift together dry ingredients and add to egg mixture.  Spray 2 loaf pans with cooking spray oil to prevent sticking.  Evenly divide batter into the 2 pans.  Bake at 325 degrees for 1 hour.  Remove from pans and cool on rake.
